Preparation time: 15 minutes
Ingredients:
- For meatballs
- 2 lbs ground turkey
- 1 egg
- 1 tablespoon almond flour
- 1/4 cup Parmesan cheese
- 1 cup chopped spinach
- 1/2 roasted pepper, diced
- 1/4 cup fresh parsley, chopped
- 1 tsp. garlic powder
- 1 tsp. Italian herbs
- 1/2 tsp. sea salt
- 1/2 tsp. ground black pepper
- a pinch of dry chilli
- Honey mustard sauce :
- 2 tablespoons of homemade mayonnaise
- 1 tablespoon of dijon
- 1 tablespoon of honey
Recipe:
- Preheat the oven to 400° Fahrenheit and line a large baking sheet with parchment paper.
- Add all the ingredients to a large mixing bowl, and use your hands to combine the ingredients.
- Form meatballs the size of a large golf ball and place on the lined baking sheet.
- Transfer them to the oven and bake for 20-25 minutes, until fully cooked.
- While the meatballs are cooking, prepare the sauce. Place all the ingredients for the sauce in a bowl and mix together.
- Remove the meatballs from the oven and serve them topped with honey-mustard sauce.
