Preparation time: 15 minutes
Ingredients:
- For the meatballs
- 2 lbs ground turkey
- 1 egg
- 1 tablespoon almond flour
- 1/4 cup Parmesan cheese
- 1 cup chopped spinach
- 1/2 roasted bell pepper, diced
- 1/4 cup fresh parsley, chopped
- 1 tsp garlic powder
- 1 tsp. Italian herbs
- 1/2 teaspoon sea salt
- 1/2 teaspoon ground black pepper
- a pinch of dried chilli pepper
- Honey mustard sauce :
- 2 tablespoons homemade mayonnaise
- 1 tablespoon dijon
- 1 tablespoon honey
Recipe:
- Preheat the oven to 400° Fahrenheit and line a large baking sheet with parchment paper.
- Add all the ingredients to a large mixing bowl, and use your hands to combine the ingredients.
- Form meatballs the size of large golf balls and place on lined baking sheet.
- Transfer them to the oven and bake for 20-25 minutes, until fully cooked.
- While the meatballs are cooking, prepare the sauce. Place all sauce ingredients in a bowl and mix well.
- Remove meatballs from oven and serve topped with honey-mustard sauce.
