Preparation time: 40 minutes
Ingredients:
- A very large onion
- 1 tablespoon ofgarlic
- 2 peppers (1 orange and 1 yellow)
- 4 large stalks of celery
- 4 large carrots
- 1/2 large tub of baby spinach
- 1 pound of ground chicken or ground pork or ground beef
- 900 ml beef stock
- A small stick of cherry tomato
- A bottle of tomato sauce
- One tablespoon of tomato paste
- 2 tsp Italian spices
- 1/2 cup short pasta
Recipe:
- Fry the onion
- Add the garlic and all the other vegetables and spices and fry for a few minutes
- Add the minced meat and cook for about 15 minutes
- Add the stock, sauce and paste, tomatoes and bring to the boil
- Reduce and simmer for 15 minutes
- Add the pasta and spinach and simmer for 10 minutes (add parsley if you feel like it!)
