Our organic filet mignon from 100% grass-fed beef by Les Fermes Valens, comes from the fine tip of the tenderloin, located along the spinal column. This rare, tender cut benefits from a herbicide- and pesticide-free diet, guaranteed by our organic certification. In summer, our cattle graze freely, while in winter they feed on organic hay. Tenderloin is exceptionally tender, with little movement. To fully appreciate its softness, opt for rare to medium-rare cooking, about 10 to 15 minutes, turning it halfway through cooking. Be sure to take the meat out of the fridge early for even cooking.

Organic Filet Mignon recipe for 4 people 

Start by peeling and finely chopping 3 shallots. Place in a saucepan with 125 ml dry white wine and bring to the boil. Then reduce the heat and gradually add 100 g of diced butter, stirring constantly. Make sure the sauce doesn't come to the boil again. Season with salt and pepper and keep warm.

In a large frying pan, melt 50 g butter and sear the tenderloins for 5 minutes on each side, until desired doneness.

Serve the fillets drizzled with the shallot-white wine sauce and accompanied by a gourmet pan of green beans and mushrooms.
