Recipe Idea with Minced Turkey

Here's a simple and delicious way to use up your ground turkey: turkey bolognese pasta.

Ingredients:

• 500g ground turkey
• 1 medium onion, finely chopped
• 2 garlic cloves, minced
• 1 carrot, diced
• 1 stalk celery, diced
• 400g canned crushed tomatoes
• 2 tablespoons tomato paste
• 1 teaspoon herbes de Provence
• Salt and pepper to taste
• Olive oil
• 400g pasta of your choice
• Grated Parmesan cheese, to serve

Instructions :

1) Preparing the sauce :

• Heat a little olive oil in a large frying pan over medium heat. Add the onion, garlic, carrot and celery. Sauté until the vegetables are tender.
• Increase the heat, add the ground turkey and cook until golden brown, breaking it up with a wooden spoon.
• Add the crushed tomatoes, tomato paste and herbes de Provence. Add salt and pepper to taste. Simmer over low heat for 20 minutes, until the sauce thickens.

• While the sauce is simmering, cook the pasta according to package instructions in a large pot of boiling salted water.
• Drain the pasta and reserve one cup of the cooking water.

• Add the pasta to the turkey Bolognese sauce, adding a little cooking water to achieve the desired consistency.
• Serve hot with grated Parmesan cheese on top.
