
Originally from Switzerland, cheese-maker Fritz Kaiser was a pioneer in the creation of Raclette Canadienne. Raclette Régulière is a semi-soft cheese surface-ripened for nearly 8 weeks. It has milk and butter aromas and a distinct hazelnut taste. Its name comes from the action of scraping off the melted surface of the cheese and placing it on the potatoes on the plate.
