Beef Bottom Sirloin Flap steak comes from the sides of the animal (bottom of the sirloin) and has a characteristic stringy texture. This tender piece is cooked from rare to medium.

At Valens Farms, natural beef cattle are fed a diet of grass and grain. The grain used to feed the cattle is produced and grown by our farmers.

The quality of the products is at the heart of the concerns of our farms, it is thus naturally that the herds are raised, without any hormone or antibiotic addition.

Popularised in bistros, Bottom Sirloin Flap steak is eaten with shallots. But this piece of meat can be marinated before barbecuing. We suggest the recipe for beef Bottom Sirloin Flap steak with garlic:

 

  1. In a glass dish or sealed bag, combine the following ingredients:
- Half a cup of olive oil
- 3 tablespoons chopped flat-leaf parsley
- 2 tablespoons lemon juice
- 4 cloves of garlic, finely chopped
- 1 teaspoon chopped fresh oregano
- Half a teaspoon of salt
- 1/4 teaspoon paprika
- 1 pinch of sugar
- Cayenne pepper, to taste
- Ground pepper

 

  1. Place the Bottom Sirloin Flap steak in the marinade. Cover the dish or close the bag and leave in a cool place overnight.

 

  1. Preheat the barbecue to high. Oil the grill. Grill the Bottom Sirloin Flap steak for about 5 minutes on each side for rare or continue until desired doneness. For the Bottom Sirloin Flap steak to be tender, it must be served rare. Set aside on a plate and let rest for 5 minutes.

 

  1. Accompany with sweet potatoes and grilled onions
