Le Douanier
A semi-firm cheese with a washed, brushed rind, ripened in a hâloir for over nine weeks. It is separated at the center by an edible vegetable ash, which represents Quebec's cross-border presence in the United States. With its earthy aromas and vegetal flavor, Le Douanier has a marked presence of walnut and green apple on the palate.
