The jowl is the part of the pig that extends from the lower jaw to the neck, enveloping the cheek. It is renowned for its richness and density in fat and collagen, which makes the raw meat elastic and resistant.
To tenderize it, simply heat it, as heat and humidity weaken collagen bonds and cause it to gelatinize.
This property makes jowl an ideal ingredient for giving sauces the perfect consistency.
It is also highly appreciated in terrines and stewed dishes, where it adds thickness and a melt-in-the-mouth texture after prolonged cooking at low temperature. A real delight for meat lovers.
