Dare to home-made tartar ! With organic beef of such high quality as that of Valens Farms, it's so easy! Using a sharp knife, cut the beef into thin slices and then chop the meat to the desired texture. Divide the ground tenderloin in the centre of each plate, making a depression in the meat. Drizzle lightly witholive oil then top each tartar with a raw egg yolk. Surround it with a pinch of coarse Newfoundland sea salt, freshly ground rainbow pepper, mayonnaise, organic tamari, chopped pickles and chives, capers, hot mustard, horseradish, hot sauce... Each bite of tasty beef is different and conversation is guaranteed! Traditionally served with fries or a baguette and a salad.
