Lamb is a fine, tender and juicy meat. It's packed with nutritional qualities that are essential to everyone's diet, whatever their age.
With this cubed cut, lamb can be simmered or grilled on skewers.
Lambs are fed on their mother's milk and pasture. Lamb has light-colored, barely pink flesh with pronounced flavors and is exceptionally tender.
Lamb meat is packed with B vitamins, particularly vitamin B12, which is essential for the proper functioning of the nervous system. It's also rich in proteins and minerals, such as iron, phosphorus and zinc, promoting bone health, a more efficient immune system and helping to build red blood cells.
It's with the idea of a simmered dish that we want to introduce you to veal, with this recipe for Irish-style lamb stew:
Heat the butter in a large saucepan over high heat, then add the lamb cubes (approx. 720 g for 4 people).
- Add 2 sliced onions and a stalk of celery, and cook for a few minutes.
- Add a tablespoon of flour and 3 cups of chicken broth (about 750 ml) and mix well.
- Add 2 cloves of sliced garlic, 2 roughly chopped carrots, thyme, bay leaf, salt and pepper, cover and cook for 1h15 over low heat.
- Tip: some of the broth can be replaced by wine (white or red) or beer.
