Recipe idea with smoked bacon
Here's a recipe for bacon and scrambled egg whoopies, ideal for aperitifs or family brunches. The whoopie is a small, individual sandwich.
Preparing the whoopies:
- Preheat oven to 180°C (gas mark 6)
- Mix 100 g soft butter with 2 whole eggs. Add 200 g flour, half a teaspoon baking powder and stir.
- Line the baking sheet with baking parchment. Make small heaps with the dough, spacing them well apart, and flatten them with the back of a tablespoon (be careful, they will puff up when cooked). Bake for 10 minutes.
- Meanwhile, heat a frying pan to white and brown 150g of sliced bacon, then drain on kitchen paper.
- Break 4 eggs into a bowl, beat into an omelette and season with salt and pepper. Prepare scrambled eggs in a frying pan: heat 30 g butter, pour in eggs and work with a wooden spoon until set.
- Once the pastry has come out of the oven, cover half the whoopies with scrambled eggs and a slice of bacon, and top with another whoopie. Serve hot.
