A large proportion of pork chops come from the loin of the pig, i.e. the back. This part of the animal offers tender and tasty meat.

Valens Farms is located in the Montérégie region, known as the "food pantry of Quebec". The climate and the land are conducive to agriculture, making it a prolific region. It is also the place with the largest number of pig farms in Quebec.

It is on this rich land that the various cereals needed to feed pigs are grown. It is worth remembering that pork is a source of protein, iron and zinc. These elements contribute to the proper functioning of the nervous system and stimulate the immune system.

This means that the pigs raised on our land are fed the best possible diet and are raised without hormones or antibiotics.

To take advantage of the benefits of pork, we suggest a recipe for lemon, honey and thyme pork chop:

 Prepare the marinade: squeeze the juice of 2 lemons, peel and chop a clove of garlic and mix with 3 tablespoons of honey, a pinch of Espelette pepper, 4 tablespoons of olive oil and 4 sprigs of thyme-serpoon.

  1. Place the pork chops in the marinade, coat both sides and place in the refrigerator for at least 2 hours (ideally marinating the day before).
  2. Drain the pork chops to preserve the marinade that will be used to glaze them during cooking. Grill the pork chops on the barbecue for about 4 to 5 minutes per side (depending on their thickness), and after turning them, paint them. Leave to rest covered.
  3. The ideal accompaniment is a nice salad of fresh green beans with cherry tomatoes.

Beautiful pan fried

I’ve tried cooking these several ways (fried with apples & onions, slow-baked with lemon & garlic…) The best way to bring out their superb taste and quality is by frying them in a pan with salt & pepper. That’s it. No comparison with store-bought chops.
