Minced pork is obtained from boneless pork without rind, and comes from almost every part of the animal.

Natural pork raised at Les Fermes Valens is fed on cereals such as corn and barley, and vitamin and mineral supplements for optimal nutritional intake. This guarantees the pig a high-quality source of protein. In addition, its low fat content and excellent nutritional value make pork a wise choice for good health.

Moist and very tasty, it's the ideal ingredient for lasagne, enchiladas, chilis and spaghetti sauce. For meatballs, meatloaves, croquettes and stuffings, it's best to work the meat quickly, as prolonged handling causes it to lose some of its tenderness. Here's an original recipe for Aztec burgers:

To make the guacamole: in a bowl, combine one coarsely crushed avocado, 10 ml lime (or lemon) juice, 6 finely chopped sun-dried tomatoes and half a teaspoon of chili pepper. Set aside for later use.

  1. To prepare the pork: in a bowl, mix 375 g ground pork, one finely chopped onion, one egg, 2 spoonfuls of wholegrain mustard, salt and pepper. Shape into 12 dumplings.
  2. In a grill pan, using tongs, cook the meatballs on all sides for 6 to 8 minutes.
  3. Meanwhile, toast 4 pita breads or warm 4 wheat tortillas (soft).
  4. Top buns with cheese slices, lettuce, meatballs and avocado mixture. Roll up and serve, half-wrapped in waxed paper.
  5. Tip: you can replace the avocado mixture with store-bought guacamole.
