Originally from Switzerland, cheese maker Fritz Kaiser was a pioneer in the creation of the Canadian Raclette. Raclette Régulière is a semi-soft cheese that is surface-ripened for nearly 8 weeks. It has the aroma of milk and butter and a marked taste of hazelnut. Its name comes from the action of scraping the melted surface of the cheese to place it on the potatoes on the plate.
