Harissa is a North African red sauce or paste whose main ingredients are chili (often smoked or dried) and garlic. Although closest to Tunisia and Algeria, it is a standard ingredient in North African cuisine. Harissa often contains seeds such as coriander, cumin and usually olive oil. It may also contain tomatoes. It is used both as a condiment and as an ingredient in recipes. In Tunisia, harissa is served as an aperitif at almost every meal. It is used as an ingredient in meats (goat or lamb) or in fish stews accompanied by vegetables, and as a flavoring for couscous. It is also used in lablabi, a chic pea soup generally eaten for breakfast.
