The New York Striploin located on the flank of the beef, on either side of the spine. You’ll love how tender this cut is. It is also known as the “New York steak.”

Certified organic, 100% grass-fed beef cattle have free access to pasture throughout their lives, allowing them to enjoy a herbivorous diet at their convenience. This diet is as beneficial to the animal as it is to the environment, providing a diversity of plants, insects and birds. By grazing, the herds stimulate the existing ecosystem. Soil quality is also impacted by grazing, as soils covered with a wide variety of vegetation offer a richer hay harvest, providing a healthy and beneficial diet for the herds during the winter months. Unlike a monoculture field, Les Fermes Valens protects biodiversity and limits soil erosion.

Thanks to their 100% grass-fed diet, beef cattle produce lean meat. Recognized for its beneficial qualities as part of a supervised diet, lean meat is packed with nutrients. Its zinc and vitamin content contributes to the proper functioning of the nervous system and strengthens the immune system.

Easy to cook, the New York Striploin only a simple seasoning before being pan-seared or grilled. We recommend cooking it rare to medium.

To accompany it, a shallot sauce will bring out its flavour:

  1. Melt 35 g of butter over medium heat, add 150 g of shallots cut into strips, mix in the butter to impregnate the shallots, then simmer over low heat for 3/4 minutes.
  2. Pour in 20 g balsamic vinegar, stir, then add 10 g acacia honey, season with salt and pepper, and mix. Keep warm.
  3. Melt 20 g of butter in the frying pan. When golden, place the counter fillets. Turn, season with salt and pepper. Cook to desired doneness and serve immediately.
