The sirloin is located on the loin of the beef, on either side of the spine. This cut will satisfy you with its tenderness. This cut is also known as the "New York Steak".

Throughout their lives, certified organic, 100% grass-fed cattle have free access to pasture, allowing them to enjoy a herbivorous diet at their convenience. This diet is beneficial to both the animal and the environment, providing diversity in plants as well as insects and birds. By grazing, the herds stimulate the existing ecosystem. The quality of the soil is also impacted by grazing, as soils covered with a wide variety of plants provide a richer hay crop, allowing for a healthy and beneficial feed for the herds during the winter months. Unlike a monocultured field, Valens Farms protect biodiversity and limit soil erosion.

Because they are fed 100% grass, beef cattle produce lean meat. Lean meat is known for its beneficial qualities in a supervised diet and contains many nutrients. Its zinc and vitamin content contributes to the proper functioning of the nervous system and strengthens the immune system.

Simple to cook, the sirloin requires a simple seasoning before pan-frying or grilling. We recommend medium-rare to medium-rare.

To accompany it, a shallot sauce will revive its taste:

  1. Melt 35 g of butter over medium heat, add 150 g of shallots previously cut into strips, mix the butter to impregnate the shallots, then put on low heat for 3/4 minutes.
  2. Pour in 20 g of balsamic vinegar, mix, then add 10 g of acacia honey, add salt and pepper and mix. Keep warm.
  3. Melt 20 g of butter in the pan, as soon as it is golden brown, place the counter-fillets. Turn over, add salt and pepper. Cook to desired doneness and serve immediately.
